What We're Eating

Six weeks after the start of 2013, I'm still meal planning and truly amazed at how simple and stress-free it's made meal times. I've made dozens of recipes that were big successes and just a few I'd rather not repeat again. I've had an eye on cooking healthy foods, with a lot of help from Weight Watchers recipes (although we're not dieting by any means), and I think Andi even liked most of the healthy meals I made until I let the cat out of the bag he was "eating sensibly." Since then, he's been a little more subjective about his tastes.

Here's a run-down of my meal plans the last few weeks, with special call-outs to the recipes we loved.

January 28 - February 3
MONDAY
Breakfast: Raspberry Yogurt Muffins (box)
Lunch: Tomato Tortellini Soup and Grilled Cheese
Dinner: Crock Pot Veggie Pot Pie Stew

TUESDAY
Breakfast: Eggs and Toast
Lunch: Enchilada Soup (frozen leftovers)
Dinner: Crock Pot Ranch Chicken Tacos*

*It goes without saying, every single recipe I make is classified as "easy" so I recommend everyone make these immediately. They were super delicious and easy to make. Even Tory ate the shredded chicken and that's truly a miracle!

WEDNESDAY
Breakfast: English Muffins
Lunch: Lunch date with old co-workers
Dinner: Date night - Restaurant Alma

THURSDAY
Breakfast: Oatmeal with peanut butter and banana
Lunch: Homemade macaroni and cheese, with pureed butternut squash mixed in
Dinner:  Baked Chicken

FRIDAY
Breakfast: Toast and Yogurt
Lunch: Peanut Butter and Jelly sandwich
Dinner: Steak and Fries

SATURDAY
Breakfast: Frozen Waffles and Yogurt
Lunch: Crock Pot Beer Chicken*

*This Crock Pot Beer Chicken was easy to throw together and a good hearty meal. We served it on a bed of egg noodles with smashed potatoes. Delicious.

Dinner: Leftovers

SUNDAY
Breakfast: French Toast and Fruit
Lunch: Frozen Pizza
Dinner: Grandpa Jim Birthday Dinner

February 4 - 10
MONDAY
Breakfast: Toast and Yogurt
Lunch: Trader Joe's French Onion Soup
Dinner: Chicken and Asparagus Penne Pasta

TUESDAY
Breakfast: Asparagus, Spinach and Feta Quiche
Lunch: Enchilada Soup (frozen leftovers)
Dinner: Crock Pot Meatballs and Mashed Potatoes

WEDNESDAY
Breakfast: Applesauce, Banana, Yogurt and Cinnamon*

Lunch: Trader Joe's Frozen Greek Pizza
Dinner: Parmesan Chicken*

*I liked this, but Andi didn't. Although, I definitely wouldn't say it's "better than fried chicken" like Pinterest suggests.

THURSDAY
Breakfast: Toast, Yogurt
Lunch: Egg and Cheese Sandwich
Dinner: Play date; Take-out Pizza

FRIDAY
Breakfast: Oatmeal
Lunch: Play date lunch with friends
Dinner: Out to eat - Cheeseburger and Fries

SATURDAY
Breakfast: Pancakes
Lunch: Out to eat - Luck Winter Carnival

Dinner: Chicken Salad Sandwiches made from this Slow Cooker Chicken*

*This was so simple. Andi threw in the whole chicken into the Crock Pot and we not only ate chicken sandwiches for dinner, but also had about 3 servings of shredded chicken to freeze for future meals.

SUNDAY
Breakfast: Frozen Waffles and Yogurt
Lunch: Take-out, Rusty Tacos
Dinner: Baked Chicken

February 11-17
MONDAY
Breakfast: Crock pot Applesauce*

*Good flavor and easy to make. Next time, I'll smash the cooked apples (or maybe blend?) the applesauce once cooked because Tory had a hard time chewing (and not gagging) on the apple chunks. Oh, kiddo. :)

Lunch: Egg and Cheese Sandwich
Dinner: Cream Cheese Chicken Chili*

*I ended up cooking this on the stove top, instead of the Crock Pot, but it was still very tasty. I used shredded chicken I already had in the freezer so I'd estimate it took less than 20 minutes to pull all this together. I didn't add all the white American cheese slices the recipe called for because whoa, that's a lot of cheese. Andi and I both enjoyed it and I think the leftovers will freeze well also.

TUESDAY
Breakfast: Blueberry Lemon Yogurt Bread*

*Lordy, was this tasty. I think Tory and I both had two slices for breakfast. The lemon flavor is present without being overpowering and the blueberries made the bread nice and juicy. I didn't add the glaze topping because I was out of lemons and the bread itself was delicious.

WEDNESDAY - My birthday!! I thought extra hard about special foods I wanted to eat.

THURSDAY
Breakfast: Banana Bread Muffins
Lunch: Tomato Tortellini Soup (leftovers)
Dinner: Chicken Spinach Pasta Bake

FRIDAY
Breakfast: Frozen Waffles
Lunch: Chicken Spinach Pasta Bake (leftovers)
Dinner: Beef Enchiladas

SATURDAY
Breakfast: Jelly Toast and Yogurt
Lunch: Enchiladas (leftovers)
Dinner: Ravioli

SUNDAY
Breakfast: Toast and Eggs
Lunch: Macaroni and Cheese
Dinner: Crock Pot Chicken and Broccoli

  1. We've made a few of these meals too :) Guess that's what happens when you are followed on Pinterest! I wasn't a fan of the beer chicken, it seemed really dry, maybe I overcooked it? Also, I tried those egg/banana bites and did not have good success - they were super thin and just seemed to burn right away. I added a little flour to the batter and then they were awesome, just FYI! I totally agree with meal planning getting easier and easier. It makes me so much more sane when I'm scrambling to make something after work or even just knowing what I'm going to be cooking the next couple of days!

  3. Girl! This is awesome! I totally repinned almost everything you made...yum! Question, will you come over and throw these together for my fam too?? :)

    Made our version of crock pot chicken for taco salads yesterday...I love coming home from work, when the house smells amazing and dinner is basically done!
