The Best Corny Macaroni Casserole

There's one particular food item that makes family get-togethers special in my book and that's Corny Macaroni. Healthy it is not, but who's counting calories when it comes to big holiday meals anyway?

This recipe hails from my Aunt Cheri. My siblings, cousins and I beg her to make for every family function, and she kindly begs for us to let her bring something else. I guess it would get old making the same ol' dish every time the family convenes, but we can't help it. No one makes Corny Macaroni like my aunt (not that it's difficult by any means).

A few weekends ago, Andi and I hosted the cabin neighbors at our place for a rotisserie chicken dinner. Andi suggested I whip up a pan of Corny Macaroni as an accompaniment to our meal, and I couldn't think of a reason not to. As always, it was delish and a big hit at the party.

Corny Macaroni

Ingredients:
4 cans corn (drained) 
2 cans cream corn (undrained)
1 stick margarine
3 cups elbow macaroni (uncooked)
Velvetta cheese, cut in small chunks (1/3-1/2 of the large-sized box)



Drain 4 cans of regular corn, then pour contents into a mixing bowl. Stir in 2 cans of undrained cream corn.


Cut one stick of butter into chunks and add into the corn.

Cut up half of a block of Velveeta cheese into chunks, and add to the corn/butter mixture.

Stir 3 cups of uncooked elbow macaroni noodles into the corn/butter mixture.
  

Dump mixture into a greased 9x13 pan.
 

Bake uncovered in a 350 degree oven for about an hour, stirring mixture about half-way through cooking time.

  1. Haha, when you mentioned this in a recent post I wondered if it was the same as a dish we made in college And it is!! We called it corn noodle bake and everyone loved it until it was their turn to make it and they saw the ingredients :) I haven't had it in a long time, maybe we will have to whip up a small pan for old times sake!

  3. Gosh I haven't had that in YEARS!! It does bring back some great memories :) My promise is that one of the coming years, I want to come back to NE for one of the big holidays! Miss you all xx

  4. This seems like such a mid-western dish to me! I've never seen or heard of anything like it. But maybe we will try it for our next gathering since it seems so easy! But I have a couple questions..
    1. Is it 6 cans of corn total? 4 sweet corn drained, and 2 creamed corn undrained? Or 2 of each?
    2. And, this is probably a stupid questions, but it's 3 cups cooked pasta right? Or do you put it in uncooked?

    1. Totally Midwestern! So, it's 6 cans of corn total (4 cans of regular corn, drained + 2 cans of cream corn, undrained). Also, the noodles are uncooked. How easy is that?!
