I also woke up at 4:00am starving. I knew that was going to happen ... and I even had a bowl of cereal before bed! I didn't get up to eat something, although I wanted to, and managed to fall back asleep a while later.
I woke up around 7:00am and poured myself a routine bowl of cereal with fruit. I probably have cereal for breakfast four or five times a week since I became pregnant. Mostly because, it's fast and during those few weeks of my first trimester QUICKLY getting food into my stomach was key. My favorite flavors are Lucky Charms, Cheerios, Raisin Nut Bran and Oatmeal Crisp.

I'm around food all day long for my job and today I had to take a photo of a cheese sampler we sell in one of our convenience stores. The tray contains cheese, crackers, dried nuts and grapes and of course I had to eat it once I snapped a photo of the packaging! I ate the grapes and a cracker and gave the rest to my co-worker.

For lunch today, I chose a tuna salad sandwich on croissant, chips, fruit salad and a pickle. I haven't had a tuna salad sandwich in foreva! It tasted so good, I ate the entire thing (sans the pickle).
LUNCH
I craved chocolate big time today, and I really wanted the Twix candy bar calling my name from the next desk. I never ate it, but I did snag three Thin Mint Girl Scout Cookies when I got home from work today. We STILL have Girl Scout cookies at my house. I think Andi may have gone a tad overboard when buying boxes of them this spring.
For dinner, I contemplated making something Mexican to satisfy my recent pregnancy craving, but I couldn't find half the ingredients in my pantry. How does that happen? I swear I shop from a grocery list but when I go to make a recipe we've somehow eaten (or I've forgotten) half of what's needed. I was losing all drive to cook dinner for myself so I pulled out a box of Good Earth Tuscan Chicken a co-worker gave me to try. It's a starter convenience meal where you add your own protein and includes whole grain pasta.
The meal went together easily and was ready in about 15 minutes. I also made a side of organic green beans to go along with the entree. Overall, the dish was OK. A little too saucy and over-seasoned for my taste. I suppose I could've omitted half of the seasoning packet it came with, but you never really know that until you've made something once. I'd give it a 5 out of 10. So, I only finished about half the bowl of pasta but ate all of the green beans.

Not feeling very satisfied from dinner, I made myself a little bowl of ice cream. I looove ice cream, but I don't allow myself to eat it every often. This pregnancy has definitely been an excuse to splurge a little bit in this area.
